For Google purposes, are we better to use RW’s sitemap .xml file or the Foundry’s sitemaps stack .xml file?
We assume we only want to have one published sitemap .xml file published to our site’s server.

You can use both, The Site Map Foundry stack gives your visitors an overview of your site’s page hierarchy only, it will not publish any sitemap.xml that’s what RapidWeaver does.
